My love affair with whiskey started after reading a book called Truths about Whisky, published in 1879. It explained how The Liberties in Dublin (where I was born) were the epicentre of global whiskey.

Dublin whiskey was the ‘gold standard’ spirit… the champagne of sparkling wine so to speak, at that time.

Yet after reading Truths About Whisky, I was curious to learn more. I did some digging and I realized that Irish whiskey wasn’t perceived as such a luxury item any more. In every high-end restaurant around the world, you’d be lucky to see 1 or 2 Irish whiskies on a menu with 16-45 Scottish and at least 8 American whiskies.

I owned a bar, and only had two Irish whiskies and similar ratios on Scotch to American. There were no great single Irish Whiskies represented globally, which got me thinking as to why?

In the 1600s-1900s Irish whiskey actually held 80% of the world whiskey market, but it fell from its revered spot in the 1920s. And it’s only over the past 20 years that it has once again risen in prominence.

My late father used to say that Irish whiskey was consistently better in taste and quality than other whiskeys. And I agree.

Coming from a country that has strong roots in whiskey-making, I decided to create a premium Irish whiskey brand and conceptualized The Craft Irish Whiskey Co. in 2015 over a whiskey with my father

The Craft Irish Whiskey Co. which is based in Dublin, Ireland, crafts and sells ultra-premium craft Irish whiskey procured from all corners of Ireland.

Our spirits embody the traditions of Irish whiskey but have a unique signature full-bodied quality.

Which also brings me to my blog. My passion for whiskey means I’m often talking about it, or asked for my opinions on different products, production methods and quality. I also travel the world seeking inspiration. So, here I’m sharing everything I know with other whiskey aficionados, because, let’s face it, it’s all about the craft.
